Rhett and I watched a video recently on how to make cake balls. I really wanted to try them out, but maybe try to skinny them up a bit. Here was out attempt.
Cake: 1 box chocolate cake mix (devil’s food)
1 cup plain greek yogurt
1 cup water
Blend cake mix and yogurt together and then add the water. Bake according to package directions. ( I used a 9×13 pan, you will be crumbing cake later)
Frosting: 1 1/2 cups greek yogurt
1 1/2 cups semi-sweet chocolate chips
Let greek yogurt set out for 2 hours at room temperature. Melt chocolate chips, then let them cool to room temperature. Fold the yogurt into the chocolate 1/4 of a cup at a time. Let stand until cool and spreadable.
Next: take the cake, which has cooled about 30 -45 minutes and crumble it into a large bowl. Then mix in 1 cup of the frosting into the crumbled cake. Take a melon baller and scoop rounded balls onto a wax paper lined cookie sheet. After you have filled the cookie sheet refrigerate or freeze the balls to let them set up.
While they are cooling get out your bakers chocolate and melt it. I did mine in the microwave following the box direction. I used popsicle sticks inserted into each ball and then dipped them into the melted chocolate, completely coating the outside. Because I like a little crunch I added some crushed pecans.
No, they still aren’t the healthiest, but they are skinnied up a bit. =)
